Bubby's Creamy Chopped Liver Pâté

No ratings yet
Creamy chopped liver pâté with golden onions and hard-boiled eggs.

Ingredients

  • 1 standard small package ready-to-eat kosher-broiled chicken liver (approximately 8 oz; verify package label)
  • 1 medium onion, any chop
  • Approximately 1 cup neutral oil for frying the onion, with additional oil if needed for texture (total used may range from about 3/4 to 1 1/2 cups)
  • 5 large hard-boiled eggs, peeled; 1 additional egg optional
  • Salt and black pepper, to taste

Method

  1. Check that the purchased liver is fully cooked and ready to eat; if it is only partially broiled or labeled for further cooking, cook it according to the package instructions before proceeding.
  2. Heat the oil in a skillet and fry the chopped onion until evenly golden. Remove the onions with a slotted spoon, reserving the onion-flavored oil separately.
  3. Place the prepared liver in a food processor and process first until broken down.
  4. Add the drained golden onions and five hard-boiled eggs. Process until combined. Add the sixth egg only if a milder, eggier taste is desired.
  5. With the processor running, add the reserved onion oil a spoonful or two at a time. Pause to check the consistency, continuing until smooth and creamy like pâté. The amount of oil depends on how moist the liver is; do not force in a fixed quantity.
  6. Season with salt and black pepper to taste. Transfer to a shallow covered container and refrigerate promptly. Serve chilled.

Helpful Notes & Storage
  • Allow the reserved oil to cool enough for safe handling before adding to the processor; never pour dangerously hot oil into a sealed blender or food processor.
