Ingredients
  

Noodle Base
  • 1/2 cup Oil (120 mL)
  • 8 Large eggs
  • 1 tsp Kosher salt
  • 16 oz Extra-fine egg noodles / 450 g, cooked and drained

Pastrami Mixture
  • 2 Tbsp Oil (30 mL)
  • Large onions: 2, diced

  • Garlic cloves: 3, minced
  • 8 oz Shredded cabbage / 225 g
  • 12 oz Pastrami / 340 g, cut into small pieces
  • 3 Tbsp Brown sugar
  • 2 Tbsp Spicy brown mustard
  • 1 tsp Soy sauce
  • 1 tsp Hot sauce

Method
 

  1. Cook the noodles according to package directions until just tender. Drain very well and set aside.
  2. Heat 2 tablespoons oil in a large frying pan over medium heat. Add the diced onions and 1 1/2 teaspoons salt. Cook about 5 minutes, until translucent.
  3. Add the garlic and shredded cabbage. Cook about 10 minutes, stirring often, until the cabbage softens.
  4. Add the pastrami, brown sugar, mustard, soy sauce, and hot sauce. Stir until everything is evenly coated.
  5. Reduce the heat to low and cook at least 20 minutes, preferably 40-60 minutes, stirring occasionally, until the mixture is deep golden, fragrant, and no longer watery. Cool completely.
  6. Preheat the oven to 350 F / 175 C. Line 36 muffin wells with paper liners, or grease the wells very generously.
  7. In a very large bowl, whisk together the 1/2 cup oil, 8 eggs, and 1 teaspoon salt.
  8. Add the cooled pastrami mixture and drained noodles. Toss until the noodles are evenly coated and the pastrami is distributed throughout.
  9. Divide among the muffin wells. Sprinkle each cup with crispy fried onions.
  10. Bake 25-30 minutes, until the cups feel firm in the center and the tops are lightly browned. Rest 5-10 minutes before serving.
