Servings: 6 servings

Ingredients

For the Chicken
  • 1 1/2 lb (680 g) boneless, skinless chicken breast, cut into bite-size cubes
  • 1/2 cup (60 g) all-purpose flour
  • 2 Tbsp cornstarch
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 cup (120 mL) water
  • 1 1/2 tsp oil
  • Oil, for frying
Sweet & Spicy Sauce
  • 1/2 cup (100 g) brown sugar
  • 1/2 cup (100 g) sugar
  • 1/3 cup (80 mL) hot sauce
  • 1/4 cup (85 g) honey

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, cornstarch, 2 tablespoons sugar, and baking powder.
  3. Whisk in the water and 1 1/2 teaspoons oil to make a smooth batter.
  4. Add the chicken and stir until every piece is coated.
  5. Heat about 1 inch of frying oil. Fry the chicken in batches for about 3-4 minutes, until golden. Transfer to a baking dish.
  6. Mix the brown sugar, 1/2 cup sugar, hot sauce, and honey until combined.
  7. Pour the sauce over the fried chicken and toss gently to coat.
  8. Bake uncovered for about 15-20 minutes, until the sauce is bubbling and the chicken reaches 165°F (74°C).

Notes

Recipe #179
Yield: About 6 servings
Category: Chicken & Meat
Helpful Notes
  • The two sugar measurements are intentional: 2 tablespoons goes in the batter and 1/2 cup goes in the sauce.
  • Fry in batches so the oil stays hot and the coating remains crisp.
  • For less heat, choose a milder hot sauce rather than reducing the honey.
Food Safety
Cook chicken to a minimum internal temperature of 165°F (74°C), measured in the thickest part.
Storage
Refrigerate leftovers promptly in a covered container. Reheat cooked chicken until hot throughout.
