Uncooked pasta, marinara, water, and plenty of mozzarella bake together in one dish – no boiling pot, draining, or separate mixing bowl required. This preserves the original Easiest Creamiest No-Pot Ziti method while adding precise beginner cues for dependable results.

Ingredients
  

  • 1 lb dry penne or ziti (uncooked; 454 g)
  • 3 cups marinara or pasta sauce (about 740 g)
  • 1 tsp kosher salt (about 4 g)
  • 2 1/4-3 cups water (530-710 mL; use 2 1/4 cups / 530 mL for firmer pasta, 2 1/2 cups / 600 mL for the recommended middle texture, or up to 3 cups / 710 mL for softer, creamier pasta or very thick sauce)
  • 3 cups low-moisture mozzarella (shredded; 340 g; divided)

Equipment

  • 9 x 13-inch / 23 x 33-cm baking dish, preferably at least 2 in / 5 cm deep
  • Measuring cups and spoons
  • Large spoon or flexible spatula
  • Aluminum foil

Method
 

  1. Preheat the oven. Place a rack in the center and heat the oven to 350°F / 175°C.
  2. Add the dry pasta. Pour the uncooked penne or ziti into a 9 x 13-inch / 23 x 33-cm baking dish. Spread it into a level layer so every piece has an equal chance to cook.
  3. Add the liquid. Pour in the marinara, kosher salt, and 2 1/2 cups / 600 mL water. This middle amount is recommended for the first time making the recipe.
  4. Mix thoroughly. Stir slowly for 1-2 minutes, scraping into the corners and separating any pasta pieces nested together. Every piece should be well coated with sauce.
  5. Check the liquid level. Press the pasta beneath the sauce mixture. If several pieces remain above the liquid, add water gradually, up to 3 cups / 710 mL total. Exposed pasta can remain hard and dry.
  6. Add most of the cheese. Stir 2 cups / 225 g mozzarella into the pasta. Press everything back into an even layer.
  7. Finish the top. Sprinkle the remaining 1 cup / 115 g mozzarella evenly over the casserole. For a softer casserole without a browned top, all the cheese may be mixed into the pasta instead.
  8. Seal tightly. Cover the dish firmly with foil, sealing every edge. Trapped steam is what cooks the pasta. Tent the foil slightly or lightly grease its underside if it might touch the cheese.
  9. Bake covered. Bake for 75 minutes without opening the dish during the first hour.
  10. Test the center pasta. At 75 minutes, carefully lift one corner of the foil because hot steam will escape. Remove and taste one pasta tube from near the center. If tender with only a slight bite, proceed to browning. If firm or chalky, stir exposed pieces into the sauce, re-cover tightly, and bake another 10-15 minutes.
  11. Correct a dry pan if needed. If the pasta is still firm and the pan looks dry, pour 1/4 cup / 60 mL hot water around the edges before re-covering and continuing to bake.
  12. Brown the top. When the pasta is tender, remove the foil. Bake uncovered for 5-10 minutes, until the sauce bubbles and the mozzarella develops scattered golden spots.
  13. Rest before serving. Let the ziti stand uncovered for 10 minutes. The sauce will thicken as it rests.

Notes

Make Ahead
This recipe is designed to be mixed immediately before baking. Do not assemble it the night before; the dry pasta will begin absorbing the liquid unevenly. For faster preparation, measure the ingredients separately up to one day ahead and combine them immediately before baking.
Storage
Refrigerate leftovers in a covered container within 2 hours. Keep refrigerated for up to 3-4 days.
Freezing
Freezing is not recommended for this particular no-pot recipe because the pasta can become overly soft. For a freezer-friendly option, choose the Traditional Baked Ziti recipe instead.
Reheating
  • Individual portions: Add a spoonful of marinara or water, cover, and microwave at 50 percent power in 1-minute intervals until hot.
  • Oven: Place in a covered baking dish with several spoonfuls of marinara or water. Reheat at 350°F / 175°C for about 20-30 minutes.
  • Food-safety check: Refrigerated leftovers should reach 165°F / 74°C in the center.
Optional Variations
  • Even Creamier: Replace up to 1 cup / 240 mL water with whole milk.
  • Crispy Top: Reserve 1 cup / 115 g mozzarella for the top and use the full uncovered browning time.
  • Parmesan: Replace 1/2 cup / 55 g mozzarella with 1/2 cup / 50 g finely grated Parmesan.
  • Italian Herbs: Add 1 tsp / 2 g Italian seasoning or 1/4 cup / 15 g chopped basil.
