Frozen Creamy Cheesecake Squares
Cold, creamy cheesecake squares with a buttery graham cracker crust and a light, almost cheesecake-ice-cream texture. There is no oven and no water bath. The filling is made by beating smooth cream cheese with sweetened condensed milk, vanilla, lemon juice, and salt, then gently folding in freshly whipped cream. Freeze until firm, soften briefly, and cut into creamy frozen squares.

Method
- Line the pan. Line a 9 x 13-inch / 23 x 33-cm pan with parchment paper, leaving overhang on two opposite sides to use as lifting handles later.
- Mix the crust. Combine the graham cracker crumbs, sugar, and pinch of salt. Pour in the melted butter and stir until every crumb is evenly moistened. The mixture should look like wet sand and hold together when squeezed.
- Press the crust. Spread the crumb mixture evenly in the pan and press firmly with the flat bottom of a measuring cup or glass. Press enough to hold together, but do not compact it excessively or the crust may become very hard when frozen.
- Freeze the crust. Freeze for 15 minutes while you prepare the filling.
- Beat the cream cheese. Beat the softened cream cheese for 1-2 minutes until completely smooth. Stop and scrape the sides, bottom, and beaters.
- Add the condensed milk. With the mixer on low, gradually add the sweetened condensed milk. Mix until completely smooth, then scrape the bowl again.
- Add vanilla, lemon, and salt. Mix in the vanilla, lemon juice, and salt just until combined. The lemon juice balances the sweetness and adds cheesecake tang; it should not make the dessert taste strongly lemony.
- Whip the cream. Pour the very cold heavy whipping cream into a clean bowl. Beat on medium-high until it reaches medium-stiff peaks. The peaks should stand mostly upright, with only a slight bend at the tip.
- Lighten the cheesecake base. Stir about 1 cup of the whipped cream gently into the cream-cheese mixture. This first portion is meant to loosen the dense base.
- Fold in the remaining cream. Add the rest of the whipped cream. Use a rubber spatula to cut down through the center, scrape along the bottom, and fold the mixture over itself while rotating the bowl. Stop when there are no obvious white streaks.
- Fill the pan. Remove the crust from the freezer. Spoon the cheesecake mixture over the crust and spread evenly to the corners. Smooth the top.
- Cover. Cover the pan tightly without pressing the covering heavily onto the surface.
- Freeze. Freeze for at least 6 hours, preferably overnight, until the center is firm and able to hold its shape when cut.
- Soften before cutting. Remove from the freezer and let stand at room temperature for 10-15 minutes. If it is still rock hard, give it another few minutes.
- Lift from the pan. Use the parchment handles to lift the entire frozen cheesecake slab onto a cutting board.
- Cut cleanly. Dip a sharp knife in hot water, wipe it dry, make one cut, then clean and reheat the knife before each new cut. Cut into 16 squares in a 4 x 4 grid.
- Serve. Serve cold and slightly softened. The ideal texture is firm enough to hold its shape but creamy enough to bite through easily.
Notes
Make Ahead
Prepare 1-2 days before serving and keep covered in the freezer. No last-minute baking is required.
Storage
Keep frozen in a tightly covered container. For best flavor and texture, use within 1 month.
Individual Portions
After the dessert is fully frozen and cut, place parchment between the squares and store them in a freezer-safe airtight container so you can remove only the number you need.
Optional Variations
- Berry: Serve with fresh strawberries, raspberries, blueberries, or berry sauce.
- Chocolate: Drizzle frozen squares lightly with chocolate sauce before serving.
- Graham Crumb: Reserve a few tablespoons of crumbs and sprinkle over the top before freezing.
- Caramel: Drizzle caramel sauce lightly over individual servings.
