
Fudgy Chocolate Crinkle Cookies
Fudgy cocoa cookies with snowy sugar tops that crack open beautifully as they bake.

- Mix cocoa, oil, and sugar. In a large bowl, combine the cocoa powder, oil, and granulated sugar until evenly blended. The mixture will look thick, dark, and slightly grainy.
- Add the eggs. Add the eggs one at a time, mixing well after each. The batter will become smoother and shinier.
- Add vanilla. Mix in the vanilla sugar or vanilla extract.
- Mix the dry ingredients. In another bowl, whisk together the flour, baking powder, and salt.
- Combine. Add the dry ingredients to the chocolate mixture and mix only until no flour streaks remain.
- Check the dough. The dough will be very soft and sticky. This is correct. Do not add extra flour.
- Chill. Cover tightly and refrigerate for at least 6 hours. Overnight is completely fine.
- Preheat. Heat the oven to 350°F / 175°C and line baking sheets with parchment paper.
- Prepare the coating. Place the confectioners’ sugar in a small bowl.
- Portion. Scoop about 1 tablespoon / 20–22 g dough per cookie.
- Roll. Quickly roll each portion into a 1-inch ball.
- Coat heavily. Roll each ball generously in confectioners’ sugar until the outside looks completely white.
- Arrange. Place about 2 inches apart on the prepared baking sheet. Do not flatten.
- Bake. Bake at 350°F / 175°C for exactly 12 minutes.
- Look for the crinkles. The tops should be clearly cracked, with dry-looking white sugar and dark chocolate showing through.
- Check the edges. The edges should look set while the centers remain soft.
- Do not overbake. The centers do not need to look fully dry; they continue setting as the cookies cool.
- Cool briefly. Leave on the baking sheet for 2–3 minutes.
- Transfer. Move carefully to a cooling rack.

Make Ahead, Storage & Freezing
Make ahead: The dough can be refrigerated overnight. Room temperature: Store baked cookies airtight for about 4–5 days. Freezer—baked: Freeze airtight for up to 3 months. Freezer—dough: Freeze uncoated dough balls, thaw briefly in the refrigerator, coat generously in confectioners’ sugar, and bake.
Bubby’s Tip
Do not be nervous when the middle still feels soft after 12 minutes. That is how you get the brownie-like center. The cookie finishes setting on the tray.
