Chewy little peanut-butter oat bites with date syrup, coconut, and just enough chocolate to make them feel like a treat. No oven, no mixer, and only one bowl.

Ingredients
  

  • 1/2 cup natural drippy peanut butter (about 125 g)
  • 1/3 cup date syrup / silan (about 105 g)
  • 1 tsp vanilla extract (5 mL)
  • 1/4 cup finely ground nuts (about 25-30 g)
  • 1/2 cup rolled oats (about 45 g)
  • 1/3 cup mini pareve chocolate chips (about 55-60 g)
  • 1/4 cup unsweetened shredded coconut (about 20 g)

Equipment

  • Medium mixing bowl
  • Sturdy spoon or rubber spatula
  • Measuring cups and spoons
  • Small parchment-lined tray or plate

Method
 

  1. Prepare the tray. Line a small tray or plate with parchment paper.
  2. Mix the wet ingredients. Combine the peanut butter, date syrup, and vanilla in a medium bowl. Stir until smooth.
  3. Add nuts and oats. Stir in the ground nuts and rolled oats. The mixture will begin to thicken.
  4. Add the mix-ins. Add the mini chocolate chips and shredded coconut.
  5. Bring the mixture together. Mix with a sturdy spoon, then use your hands if needed until everything is evenly combined.
  6. Check the texture. Squeeze a small handful. If it holds together when pressed, the mixture is ready. If it still crumbles, mix in peanut butter or date syrup 1 tsp at a time. If it is too sticky to roll, let it stand for about 5 minutes; if needed, mix in 1 Tbsp rolled oats.
  7. Divide. Separate the mixture into 10 equal portions.
  8. Roll. Press each portion firmly and roll between your palms into a ball.
  9. Arrange. Place the finished bites on the parchment-lined tray.
  10. Freeze. Freeze for 1 hour, until firm.
  11. Serve. Let the bites sit for a few minutes if you prefer a softer texture, then serve.

Notes

Optional Substitutions
  • Instead of the ground nuts, use 1/4 cup vanilla protein powder.
  • Instead of mini chocolate chips, use finely chopped dried cranberries or carob chips.
Make Ahead, Storage & Freezing
  • Make ahead: Excellent prepared in advance.
  • Refrigerator: Keep airtight for several days for a softer bite.
  • Freezer: Store airtight for up to about 1 month.
  • Serving from frozen: Let sit for a few minutes before eating if you prefer a softer texture.
Bubby’s Tip
Do not judge the mixture before you squeeze it with your hands. It may look crumbly in the bowl, but peanut butter and date syrup come together once you press them firmly. If a squeezed handful holds, you do not need to add anything.
