Ingredients
  

  • 4 cups all-purpose flour (480 g)
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 4 sticks margarine or plant-based baking sticks (2 cups; 454 g), cold
  • 8 large egg yolks
  • 1/2 cup granulated sugar (100 g)
  • 2 packets vanilla sugar (about 20 g), or 2 teaspoons vanilla extract
  • 1/2 lemon, juiced (about 1 1/2 Tbsp; 22 mL fresh lemon juice)
  • 1/2 cup cold water (120 mL), plus up to 2 tablespoons more only if needed
  • 1 to 1 1/4 cups thick raspberry, strawberry, apricot, cherry, or other fruit jam
  • confectioners' sugar (for dusting, optional)

Equipment

  • Large and medium mixing bowls
  • Pastry cutter, food processor, or fingertips
  • Rolling pin and 2-inch cookie cutter
  • Small cutter for optional jam windows
  • Parchment-lined baking sheets and cooling rack

Method
 

  1. Mix the dry ingredients. Whisk together the flour, baking powder, and salt.
  2. Cut in the margarine. Cut the cold margarine into cubes and work it into the flour until the mixture resembles coarse crumbs.
  3. Mix the yolks. Whisk together the egg yolks, sugar, vanilla sugar, lemon juice, and 1/2 cup cold water.
  4. Combine. Pour the yolk mixture into the flour mixture and stir until the dough begins forming.
  5. Finish gently. Use your hands to bring the dough together. If dry flour remains, add cold water 1 tablespoon at a time.
  6. Check the texture. The dough should be soft, smooth, rich, and easy to press together, but not wet or sticky.
  7. Stop once smooth. Do not knead it like bread.
  8. Chill. Divide into 3 or 4 flat discs, wrap, and refrigerate for about 1 hour.
  9. Preheat. Heat the oven to 350°F / 175°C and line baking sheets with parchment.
  10. Roll. Working with one chilled disc at a time, roll on a lightly floured surface to about 1/4 inch / 6 mm thick.
  11. Cut. Cut into roughly 2-inch rounds, flowers, hearts, stars, or another matching shape.
  12. Make bottoms. Keep about half the cookies solid; these will be the bottoms.
  13. Optional jam windows. If desired, cut a small circle or shape from the center of the other half so the jam shows through.
  14. Transfer. Move the cut cookies carefully to the prepared baking sheets.
  15. Chill if soft. If the dough becomes very soft, refrigerate the cut cookies for 10–15 minutes before baking.
  16. Bake. Bake for about 7–9 minutes per tray.
  17. Check early. Begin checking at 7 minutes.
  18. Look for pale cookies. They are done when set, still fairly pale on top, and only just beginning to turn golden at the edges and bottoms.
  19. Cool briefly. Leave on the baking sheet about 5 minutes.
  20. Cool completely. Transfer to a rack before adding jam.
  21. Prepare the bottoms. Turn the solid cookies upside down.
  22. Add jam. Spread about 3/4–1 teaspoon thick jam over each solid cookie, stopping just short of the edge.
  23. Dust window tops. If using cutout tops, dust them with confectioners’ sugar before assembling.
  24. Sandwich. Place a second cookie on top and press very gently until the jam spreads slightly toward the edge.
  25. Set. Let the assembled cookies sit before stacking so the jam can settle.

Notes

Water
Start with 1/2 cup cold water. Add more only 1 tablespoon at a time if the dough will not come together.
Jam Choices
  • Raspberry: Bright, classic, and slightly tart.
  • Apricot: Traditional and pleasantly tangy.
  • Strawberry: Familiar and beginner-friendly.
  • Cherry: Richer and sweeter.
  • Use a thick jam or preserves rather than a thin fruit sauce.
Make Ahead, Storage & Freezing
Unfilled cookies: Store airtight at room temperature for about 5 days. Filled cookies: Store airtight for about 3–4 days. Freezer: Freeze the unfilled baked cookies airtight for up to 3 months, then thaw and fill with jam.
Bubby’s Tip
Do not force all the water into the dough. Old recipes were made by feel. Once the dough is smooth enough to roll, it has enough.
