- Whisk together the lemon juice, honey, mustard, olive oil, salt, pepper, and curry powder (if using). Add the chicken and coat well. Refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C). Remove the chicken from the marinade and discard the marinade.
- Spread the chicken in a 9×13-inch pan. Bake for about 20 minutes, or until the chicken is fully cooked and reaches 165°F (74°C).
- Remove from the oven, cover, and let cool slightly.
- Whisk together the dressing ingredients until well combined.
- Place the romaine, cherry tomatoes, red onion, and chicken in a large salad bowl. Top with pine nuts or croutons.
- Pour the dressing over the salad just before serving and toss to coat.
