Ingredients
  

  • 1 Nondairy whipping topping large 16 oz (454 g) container, divided
  • 2 cups Nondairy coffee creamer (480 mL), divided
  • 1 Instant vanilla pudding mix small 3.4 oz (96 g) box
  • 1 Instant chocolate pudding mix small 3.9 oz (about 110 g) box
  • about 1 1/2 cups Chocolate sandwich cookies crushed (roughly 14-16 cookies)

  • 2 large mixing bowls
  • 9×13-inch freezer-safe pan
  • Rubber spatula
  • Rolling pin or food processor for cookies

Method
 

  1. Prepare the pan. Use a clean 9×13-inch freezer-safe pan.
  2. Make the vanilla layer. Whip 8 oz nondairy whipping topping until thick. On low speed, mix in 1 cup coffee creamer and the vanilla pudding mix until smooth and thick.
  3. Spread. Smooth the vanilla mixture evenly in the pan.
  4. Add cookie crunch. Scatter the crushed sandwich cookies evenly over the vanilla layer.
  5. Make the chocolate layer. Whip the remaining 8 oz nondairy whipping topping until thick. Mix in the remaining 1 cup coffee creamer and chocolate pudding mix.
  6. Finish the layers. Spread the chocolate mixture gently over the cookie layer without pressing hard.
  7. Freeze. Cover and freeze for at least 6 hours or overnight.
  8. Serve. Let stand 5-10 minutes before slicing if frozen very firm.
