A creamy Israeli-style pizza dip – the tomato-mayo condiment often served with pizza and also excellent with challah, fries, or vegetables. The family formula combines tomato paste, mayonnaise, garlic, paprika, sugar, oregano, water, and oil. This version keeps those ingredients intact and gives the correct mixing order so the oil emulsifies instead of separating.

Ingredients
  

  • 5 Tbsp Tomato paste (75 g)
  • 3 Tbsp Mayonnaise (45 g)
  • 1/2 tsp Fine salt
  • 1/2 tsp Black pepper
  • 3 Garlic cloves: 3, minced or gratedGarlic cloves minced or grated
  • 1 Tbsp Paprika
  • 1 Tbsp Sugar
  • 1 Tbsp Dried oregano
  • 1/2 cup Cold water (120 mL)
  • 1/2 cup Oil (120 mL)

Equipment

  • Blender, food processor, or immersion blender
  • Measuring cups and spoons
  • Rubber spatula
  • Jar or airtight container

Method
 

  1. Place the tomato paste, mayonnaise, salt, pepper, garlic, paprika, sugar, oregano, and water in a blender or food processor.
  2. Blend 20-30 seconds until completely smooth and the garlic is finely dispersed.
  3. With the machine running on low, drizzle in the oil slowly in a thin stream. Continue blending until the sauce looks creamy and uniform.
  4. Taste. Adjust salt or sugar only after the full amount of oil has been incorporated.
  5. For the best flavor, refrigerate 30 minutes before serving. Stir or shake well before each use.

What a Beginner Should Look For
Before oil: Smooth red tomato mixture. During emulsifying: The sauce becomes lighter, silkier, and slightly thicker. Finished dip: Creamy enough to cling to pizza crust but loose enough to drizzle.
Add the Oil Slowly

Make Ahead, Storage & Freezing
Refrigerate airtight up to 5 days. Stir or shake before serving. Do not leave mayonnaise-based dip at room temperature for extended periods. Freezing is not recommended.
Tip to Hand Down
A sauce with oil and water stays nicest when you build the emulsion instead of just stirring everything together. Start with the tomato base, then add the oil in a slow stream.
