A bright layered frozen treat made from four fruit-gelatin flavors blended smooth and stacked into colorful rainbow bars.

Ingredients
  

  • 1 Strawberry gelatin standard 3 oz box
  • 1 Lime gelatin standard 3 oz box
  • 1 Orange gelatin standard 3 oz box
  • 1 Lemon gelatin standard 3 oz box
  • 4 cups Boiling water total, divided
  • 1 cup Granulated sugar total, divided
  • 4 cups Orange juice total, divided
  • 4 cups Pineapple juice total, divided

Equipment

  • 4 mixing bowls
  • whisk
  • Blender or food processor
  • 2 standard 9×13-inch pans
  • Freezer space for layered pans

Method
 

  1. Make one flavor at a time. For each gelatin flavor, dissolve 1 box gelatin and 1/4 cup sugar in 1 cup boiling water.
  2. Add juices. Stir in 1 cup orange juice and 1 cup pineapple juice for that flavor.
  3. Freeze solid. Freeze each flavor separately until fully frozen.
  4. Blend smooth. Blend each frozen flavor until smooth and thick like Italian ice.
  5. Start layering. Divide the first flavor evenly between 2 clean 9×13-inch pans.
  6. Freeze briefly. Freeze about 30 minutes or until firm enough to support the next layer.
  7. Repeat. Continue with the remaining flavors, freezing about 30 minutes between layers.
  8. Final freeze. Once all four layers are assembled, cover tightly and freeze overnight.
  9. Cut and serve. Let stand a few minutes, then cut into squares or bars.
