Family-Size Chocolate Walnut Sponge Cake
A very large chocolate-coffee walnut sponge made with 18 eggs and baked in a lined roasting pan for a crowd.
Ingredients
Method
- Preheat the oven to 350°F / 175°C. Line a large roasting pan with parchment paper. The original recipe does not give exact pan dimensions.
- Place the egg whites in a very large clean mixer bowl and beat on high speed until partially stiff.
- Gradually add the sugar and continue beating until the whites are completely stiff and glossy.
- In a separate very large bowl, combine the egg yolks, potato starch, oil, cocoa, coffee, and ground walnuts. Beat until evenly mixed and smooth.
- Fold the whipped egg whites gently into the yolk mixture in several additions. Do not stir aggressively or knock out the air.
- Pour the batter into the lined roasting pan and spread it evenly without pressing down.
- Bake for 1 hour, or until the center is set and a long tester comes out clean.
- Cool completely before cutting into squares or slices.
