Old-fashioned Pesach cocoa brownies made with potato starch, oil, and chopped nuts.
Servings: 24 brownies
Course: Cookies, Bars & Pastries

Ingredients

  • 4 large eggs
  • 1 1/2 to 1 3/4 cups (300-350 g) granulated sugar
  • 1 cup (240 mL) oil
  • 1/2 cup (about 45 g) unsweetened cocoa powder
  • 1/2 cup chopped nuts
  • 3/4 cup (about 120 g) potato starch

Method

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch pan.
  2. Beat the eggs until broken up and slightly foamy.
  3. Add the sugar and beat until well combined.
  4. Slowly mix in the oil.
  5. Add the cocoa and potato starch gradually, mixing only until smooth.
  6. Fold in the chopped nuts.
  7. Spread the batter evenly in the prepared 9×13-inch pan.
  8. Bake for 45-50 minutes, following the handwritten family timing. Begin checking at 45 minutes so the brownies do not dry out.
  9. Cool before cutting so the center has time to set.
