No ratings yet
A soft Pesach blondie made with potato starch, ground nuts, brown sugar, and chocolate chips.
Servings: 24 bars
Course: Cookies, Bars & Pastries

Ingredients

  • 1 cup (about 160 g) potato starch
  • 3/4 cup (180 mL) oil
  • 3/4 cup ground walnuts – the handwritten source notes that any variety of ground nuts may be used
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup packed brown sugar (about 165 g)
  • 3 large eggs
  • 1 tsp vanilla sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup (about 125 g) chocolate chips

Method

  1. Preheat the oven to 350°F (175°C). Line or grease a 9×13-inch pan.
  2. In a large bowl, mix the oil, granulated sugar, and brown sugar until evenly combined.
  3. Add the eggs and mix until smooth.
  4. Add the potato starch, ground nuts, vanilla sugar, baking powder, and salt.
  5. Mix only until no dry pockets remain.
  6. Fold in the chocolate chips.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for about 35-40 minutes. Begin checking around 30 minutes, as the handwritten page warns not to overbake.
  9. Remove when the top is set and a tester shows moist crumbs rather than wet batter.
  10. Cool completely before cutting into bars.

Notes

Recipe #230
Yield: One 9×13-inch pan; about 24 bars
Category: Cookies, Bars & Pastries
Helpful Notes
  • Use potato starch, not flour.
  • Marked ‘good’ in the family recipe collection.
  • Use 1 cup potato starch and 1/4 tsp salt.
  • Do not overbake. These bars continue to set as they cool.
Storage
Cool completely before covering. Store airtight at room temperature for short-term use or freeze well wrapped for longer storage.
Tip to Hand Down
Start checking before the full bake time. A moist crumb is better than a dry blondie.
