Rich no-bake peanut butter and chocolate crunch candy made with crisp rice cereal, topped with a white-chocolate peanut butter glaze and decorative dark-chocolate feathering.

Ingredients
  

  • 18 oz peanut butter (510 g)
  • 12 oz pareve baking chocolate (340 g)
  • 1 1/2 cups honey (about 510 g)
  • 1 can salted peanuts (chopped, OR use chunky peanut butter for some or all of the peanut butter)
  • 6 cups crisp rice cereal (plus up to 2 additional cups as needed)
White-Chocolate Peanut Butter Glaze
  • 14 oz pareve white chocolate (397 g)
  • 4 Tbsp peanut butter (about 64 g)
Decorative Drizzle
  • 2 squares pareve baking chocolate (about 2 oz; 56 g)

Equipment

  • Double boiler or heatproof bowl over simmering water
  • large mixing bowl
  • Rimmed sheet pan, about 10×15 or similar
  • Parchment paper
  • Small saucepan or heatproof bowl for glaze
  • Plastic piping bag or zip-top bag
  • Round cookie cutter
  • Sharp knife or skewer for feathering

Method
 

  1. Prepare the pan. Line a rimmed sheet pan with parchment paper.
  2. Melt the base. In a double boiler melt peanut butter, baking chocolate, and honey together until smooth.
  3. Add peanuts if using. Stir in the chopped salted peanuts.
  4. Add cereal. Remove from heat and fold in 6 cups crisp rice cereal. Add up to 2 more cups only if the mixture is still very loose and heavily coated.
  5. Press into the pan. Spread and press the mixture into an even compact layer.
  6. Cool until firm. Let cool at room temperature, then refrigerate briefly if needed until the surface is firm enough to glaze.
  7. Make the glaze. Melt the white chocolate with 4 Tbsp peanut butter over very low heat or a double boiler until smooth.
  8. Glaze. Pour over the peanut crunch and tilt the pan quickly so the glaze spreads evenly.
  9. Add dark lines. Melt the dark baking chocolate and place it in a small piping bag. Pipe straight lines across the width of the glaze.
  10. Create the feathered pattern. Drag the tip of a knife or skewer lengthwise through the lines, alternating direction each pass, to create a wavy professional pattern.
  11. Set before cutting. Let the glaze set until firm but not brittle.
  12. Cut rounds. Use a round cookie cutter to cut the crunch into circles. Save the scraps for snacking or crumble topping.

Notes

Variations
  • Use chunky peanut butter and omit chopped peanuts.
  • Cut into squares instead of rounds for less waste.
  • Use dark chocolate instead of semisweet baking chocolate for a less-sweet base.
Make Ahead, Storage & Freezing
Room temperature: Store in a cool room for about 3-4 days. Refrigerator: Up to 2 weeks, layered with parchment. Freezer: After cutting, freeze airtight for up to 2-3 months. Thaw slightly before serving.
Tip to Hand Down
Cut first, freeze later. That’s the difference between a clean glossy top and a glaze that shatters into pieces.
