
Honey-Oat Muffins – Chocolate Chip or Blueberry
A flexible whole-wheat oat muffin sweetened with honey and applesauce, with your choice of chocolate chips or blueberries.

- Preheat. Heat the oven to 350°F / 175°C and line about 14 muffin cups.
- Mix the dry ingredients. Whisk whole-wheat flour, oats, salt, cinnamon, baking powder, and baking soda.
- Mix the wet ingredients. Whisk applesauce, honey, oil, egg white, and vanilla.
- Combine gently. Pour the wet mixture into the dry mixture and fold only until almost combined.
- Choose your add-in. Fold in either 1/2 cup chocolate chips or 1/2 cup blueberries.
- Fill. Divide the batter among muffin cups, filling about 2/3 to 3/4 full.
- Bake. Bake for 15-20 minutes. Remove when the tops are set and lightly browned and a toothpick through the cake portion comes out clean or with a few moist crumbs.
- Cool. Let stand in the pan 5 minutes, then transfer to a cooling rack.
Notes
Variations
- Use sugar-free chocolate chips if preferred.
- Use frozen blueberries straight from the freezer.
- Add 1/4 cup chopped walnuts for extra crunch.
