Sweet Pepper Schnitzel
Golden schnitzel baked under sweet peppers, onions, apricot, and duck sauce for a rich family-style chicken dish.
Ingredients
Method
- Preheat the oven to 375°F (190°C).
- Dip the chicken cutlets in beaten egg, then coat lightly in flour.
- Heat a thin layer of oil in a skillet and fry the cutlets just until lightly golden on both sides. They do not need to be fully cooked yet.
- Transfer the schnitzel to a 9×13-inch baking dish.
- In the same skillet, saute the diced onion and sliced peppers until they begin to soften.
- Stir in the brown sugar, ketchup, apricot jam, and duck sauce until combined and glossy.
- Pour the pepper mixture over the schnitzel. Cover and bake for about 30 minutes.
- Uncover and bake about 10 minutes more, until bubbling and the chicken reaches 165°F (74°C) internally.
Notes
Recipe #178
Yield: About 6 servings
Category: Chicken & Meat
Helpful Notes
- Do not over-fry the schnitzel at the beginning; the oven finishes cooking it.
- Use red, yellow, and orange peppers for the prettiest presentation.
- The sauce is sweet and generous, so this works especially well with rice or mashed potatoes.
