Golden schnitzel baked under sweet peppers, onions, apricot, and duck sauce for a rich family-style chicken dish.
Servings: 6 servings

Ingredients

For the Schnitzel
  • About 2 lb (907 g) thin chicken cutlets
  • 2 eggs, beaten
  • About 1 cup (120 g) all-purpose flour, for coating
  • Oil, for frying
Pepper Sauce
  • 1 medium onion, diced
  • 3 bell peppers in assorted colors, sliced
  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (60 mL) ketchup
  • 1/2 cup (160 g) apricot jam
  • 1/2 cup (120 mL) duck sauce

Method

  1. Preheat the oven to 375°F (190°C).
  2. Dip the chicken cutlets in beaten egg, then coat lightly in flour.
  3. Heat a thin layer of oil in a skillet and fry the cutlets just until lightly golden on both sides. They do not need to be fully cooked yet.
  4. Transfer the schnitzel to a 9×13-inch baking dish.
  5. In the same skillet, saute the diced onion and sliced peppers until they begin to soften.
  6. Stir in the brown sugar, ketchup, apricot jam, and duck sauce until combined and glossy.
  7. Pour the pepper mixture over the schnitzel. Cover and bake for about 30 minutes.
  8. Uncover and bake about 10 minutes more, until bubbling and the chicken reaches 165°F (74°C) internally.

Notes

Recipe #178
Yield: About 6 servings
Category: Chicken & Meat
Helpful Notes
  • Do not over-fry the schnitzel at the beginning; the oven finishes cooking it.
  • Use red, yellow, and orange peppers for the prettiest presentation.
  • The sauce is sweet and generous, so this works especially well with rice or mashed potatoes.
Food Safety
Cook chicken to a minimum internal temperature of 165°F (74°C), measured in the thickest part.
Storage
Refrigerate leftovers promptly in a covered container. Reheat cooked chicken until hot throughout.
